Pappardelle with Mushroom Ragù

Serves 4 

Ingredients

  • 400g of Pasta Pepe fresh pappardelle
  • 200g of mixed mushrooms (swiss brown, enoki, oyster or similar)
  • 1 clove of garlic, sliced
  • Flat leaf parsley, roughly chopped
  • Olive Oil
  • Salt

Steps

  1. Gently cook garlic in a frying pan with a generous amount of olive oil until just starting to colour.
  2. Add sliced mushrooms and cook until just tender.
  3. Add parsley and salt to taste
  4. Bring a large saucepan of salted water to the boil and cook pappardelle for 4 minutes.
  5. Gently lift the pasta out of the water directly into the pan with the mushrooms and stir to combine. Serve immediately. Buon appetito!
