Bolognese Veloce

Ingredients

  • 1 packet Pasta Pepe Pappardelle
  • 1 brown onion, diced
  • Olive oil, salt & pepper
  • 250g beef mince
  • 1 glass red wine
  • 2 bay leaves
  • 4 Tbsp tomato paste
  • 1 cup water
  • Grated Parmesan

Steps

  1. Fry onion in a generous amount of olive oil until soft. Add mince and stir until browned.
  2. Add wine, bay leaves, salt & pepper and reduce by half.
  3. Add tomato paste and water. Simmer for 15-20 minutes.
  4. Meanwhile, bring a large saucepan of salted water to the boil. Cook pasta for 10 minutes until al dente.
  5. Drain pasta and toss through sauce. Serve with Parmesan. Enjoy!
