Casarecce alla Calabrese

Ingredients

  • 1 packet Pasta Pepe Casarecce
  • Small red onion, chopped
  • 1 hot chili, chopped
  • Olive oil
  • 2 x 400g tinned tomatoes
  • Salt
  • 2 medium potatoes, peeled & cut in wedges
  • 200g green beans, topped & tailed
  • Handful of fresh basil

Steps

  1. Fry onion and chili in olive oil until soft. Add tomato and salt and simmer for 10 minutes.
  2. Meanwhile, bring a large saucepan of salted water to the boil. Add potato and cook for 5 minutes.
  3. Add beans and pasta and cook for 10 minutes until al dente.
  4. Drain potato, beans and pasta and combine with sauce and torn basil leaves. Enjoy!
