Duck and Porcini Tortelli with Garlic, Mushrooms, Parsley

Serves 4 as entrée or 2 generous main courses

Ingredients

  • 1 x packet of Pasta Pepe Duck and Porcini Tortelli
  • 1 clove of garlic, sliced
  • 12 medium Swiss brown or button mushrooms, sliced
  • 1/2 bunch of flat leaf parsley, roughly chopped
  • Extra virgin olive oil
  • Salt to taste
  • Parmesan 

Steps

  1. Cook tortelli according to the instructions on the packet.
  2. In a frying pan, place a generous amount of olive oil with the garlic. Over medium heat, gently fry for a couple of minutes then add the mushrooms and cook until soft
  3. Add salt to taste and parsley. Place agnolotti in serving bowls and spoon mushrooms over. Sprinkle with parmesan. Enjoy!
