Paccheri Amatriciana

Ingredients

  • 1 packet Pasta Pepe Paccheri
  • 120g pancetta, diced
  • Olive oil
  • 2 x 400g tinned tomatoes or 1 bottle of passata
  • Salt & pepper
  • Handful aged pecorino cheese, grated

Steps

  1. Fry pancetta in olive oil until crisp.
  2. Add tomato and salt and pepper to taste and simmer for 10 minutes.
  3. Meanwhile, bring a large saucepan of salted water to the boil, add pasta and cook for 10 minutes until al dente.
  4. Drain pasta and toss with sauce. Serve with pecorino cheese. Enjoy!
