Pappardelle with Mushroom Ragù

Serves 4
Ingredients
- 400g of Pasta Pepe fresh pappardelle
- 200g of mixed mushrooms (swiss brown, enoki, oyster or similar)
- 1 clove of garlic, sliced
- Flat leaf parsley, roughly chopped
- Olive Oil
- Salt
Steps
- Gently cook garlic in a frying pan with a generous amount of olive oil until just starting to colour.
- Add sliced mushrooms and cook until just tender.
- Add parsley and salt to taste
- Bring a large saucepan of salted water to the boil and cook pappardelle for 4 minutes.
- Gently lift the pasta out of the water directly into the pan with the mushrooms and stir to combine. Serve immediately. Buon appetito!
