Tortellini in Brodo

Serves 4 

Ingredients

  • 1 litre of chicken stock 
    • To make, boil one chicken carcass in 1.5 litres of water with salt, 1 carrot, 1 onion, 2 celery sticks and some parsley stalks for about an hour, skimming to remove any impurities
  • 400g of Pasta Pepe fresh Roast Chicken Tortellini
  • 1 carrot, sliced
  • Flat leaf parsley, roughly chopped
  • Parmesan Cheese

Steps

  1. Bring stock to the boil, add tortellini and carrot and cook for 7 minutes.
  2. Serve topped with parsley and parmesan cheese. Buon appetito!
