Truffle Ravioli 'Cacio e Pepe'

Serves 4
Ingredients
- 2 x packs of Pasta Pepe fresh Potato and Truffle Ravioli
- 100g of grated parmesan cheeese
- 100g of grated pecorino cheese
- Freshly ground black pepper
Steps
- Cook pasta in boiling salted water for 4 minutes.
- In a bowl, combine both cheeses and a generous amount of ground black pepper.
- Drain pasta, reserving a cup of the cooking water, then return pasta to the pot.
- Add a little of the water to the cheese, stirring constantly to make a paste.
- Add to the pasta with enough water to create a creamy sauce. Serve immediately. Buon appetito!
